A basic recipe for cooking Uyghur Polu

Note: Uyghur Polu is a flavorful and hearty dish that combines tender meat, aromatic rice, and vegetables (carrots and onion). Adjust the seasoning and cooking times according to your preferences for a perfect meal. Enjoy your homemade Uyghur Polu!
This recipe was prepared by Mr. Mt Zunun. The picture accompanying it illustrates Polu cooked according to his instructions.

Ingredients:
• 1/2 cup oil
• 1 lb lamb or beef, cubed
• 1 large onion, chopped
• 1 lb carrots, peeled and sliced
• Salt, to taste
• 2 1/4 cups water
• 2 cups rice
• 1 teaspoon cumin
Directions:
1. Heat the oil in a large pot over medium-high heat (about 7/10 on the stove setting).
2. Add the cubed lamb or beef to the pot and cook, stirring occasionally, until evenly browned.
3. Stir in the chopped onion and cook until it becomes translucent and fragrant.
4. Add the sliced carrots to the pot and stir well to combine with the meat and onion.
5. Season with salt according to your taste preferences.
6. Pour water into the pot and bring it to a boil.
7. Once the water is boiling, reduce the heat to medium-low (about 3/10 on the stove) and let the mixture simmer for about 5 minutes.
8. Add the cumin to the pot and stir it to enhance the flavours.
9. Increase the heat to medium-high again and add the rice to the pot, spreading it evenly on the mixture without stirring.
10. Once the water is no longer visible above the rice, gently push the rice towards the centre of the pot with a spoon.
11. Cover the pot with a lid and reduce the heat to low (about 3/10 on the stove). Let the Polu cook undisturbed for 30 minutes.
12. After 30 minutes, remove the lid and gently stir the rice, meat, and vegetables to combine everything evenly.
13. Serve the Polu hot as a main dish, garnished with fresh herbs if desired.
